Park Slope Recipes from Tiny New York Kitchen: Victoria's Everyday Meatballs

Meatballs on a pile of pasta covered in a red sauce is a great basic meal.

Victoria's Everyday Meatballs

I love these basic meatballs, especially when topped on a pile of pasta covered in a
red sauce. I'm just a basic gal, I guess.

INGREDIENTS:

  • 16 Ounces Hot or Mild Ground Italian Sausage
  • 1 Lightly Beaten Egg
  • 1/3 Cup Bread Crumbs
  • 1/4 Cup Grated Parmesan Cheese
  • 1/4 Cup Milk
  • 1/4 Cup Chopped Onion

DIRECTIONS:

Preheat your oven to 350° F. Chop the onion into fine pieces. In a large bowl combine the egg, bread crumbs, Parmesan cheese, milk and chopped onions.

Add the sausage to the bread crumb mixture and mix well with your hands and shape into 20 meatballs. Cover a baking sheet with parchment paper and arrange the meatballs on the baking sheet. Bake for 25 minutes.

Serve over your favorite pasta and favorite sauce. Also is great for making a delicious grinder. Serves 6 people.

The best meatballs are made with three meats: pork, veal and ground beef.

I've made meatballs with three meats as you mention above, also with only ground beef. I've have not made meatballs with only ground sausage; it sounds quite delicious and I plan on trying it out soon. My kitchen is under construction but in a couple of weeks it will be good to go and I'll be trying it then.

Hi Anthony & Patti,
In all honesty, the best meatballs are made with the three meats. Many times I don't have the three meats on hand and will make either ground beef or ground sausage (or a combination of the two). The ground sausage actually turns out pretty good. I always like to get my ground sausage from an Italian butcher or an Italian specialty store. I am sure that your kitchen is going to turn out great, Patti! I would love to see the before and after photos. I am looking at doing a big kitchen renovation sometime next year. Have a great day you two! As always, thanks for the great comments. Victoria

Being that it is an election year, if you and other registered voters scream loudly enough, someoneRead More will hear you. This sounds like a job for the 7 On Your Side, or NY1 who may be able to reach NYCDOT and Higher Ranking officials at the 78th PCT to respond to your complaint and do something.
