Valley Shepherd Bringing Grilled Cheese and More With Meltkraft

Cheese lovers rejoice with Meltkraft set to open in early September.

While Park Slope has already been enjoying the farm-fresh ingredients from Valley Shepherd Creamery on 7th Avenue, customers old and new will now get a taste of more at Meltkraft.

The creamery will bring its second grilled cheese sandwich shop (its first is in Philadelphia) to Park Slope in early September. The menu will feature innovative grilled cheese sandwiches ranging from the Shepherd Classic with three, three month aged cheeses, to the Valley Thunder with 12-month cheddar, brisket and house baked macaroni and cheese. 

“We try to be a business based on locality, while also keeping our farm roots as an essential part,” said Rebecca Foxman, executive chef at Meltkraft. “We’re all really excited to open up.”

The group had been looking for a place since mid-2012 before settling at their location on 9th street because of the proximity to the subway, and their other shop.

“We wanted to stay in a range where our regulars can come in,” said general manager Samantha Safer. “People come into that store for pantry items, pasta, bread, milk, cheese…so this will sort of expand on that.”

Not only will they feature the sandwiches, but there will also be 10 rotating beers on tap, soup, their entire cheese selection and even a full slate of coffee for the early crowd. The restaurant plans to open 7 a.m. and will also have a front and back patio for seating and a fireplace inside.

“This is an expansion of the creamery itself,” Foxman said. “It’s all hand-picked products based on everybody’s love of cheese.”
