Salted Carmel Apple Pie From Four & Twenty Blackbirds

Pies have secured a permanent place on the table during the holidays and if you cannot bake or don’t have time to bake think about stopping by for a full pie or a slice of something sweet and delicious.

Park Slope Patch stopped by the bakery, on Third Avenue between Seventh and Eighth streets, this week to taste the holiday spirit, and boy are we feeling jolly.

The Salted Carmel Apple Pie, which costs $35 for a full pie or $4.75 for a slice, is the best pie they have during the holiday season.

This nine-inch pie, which can serve up to eight people, is made from local, fresh ingredients and baked fresh everyday.

The apples are from Wilklow Orchards, which is in Highland, New York in the Hudson Valley. The salted caramel is homemade and the pie also has a mixture of spices, Angostura Bitters (usually used for cocktails but adds a nice aroma), sea salt and raw sugar and sits in a butter piecrust, also made by hand.

The pie is delicious, sweet and savory. The apples are fresh, but soft. The salted caramel is amazing is so good that you will be singing carols between each forkful. 

Emily Elsen, who is the co-owner with her sister Melissa, said that they sell 70 to 80 pies a day on Saturday and Sunday and 30 to 40 pies a day throughout the week.

They bake new pies everyday.

Elsen said the apple pie is their most popular.

“It’s our number one best seller. Apples are in season during Thanksgiving and Christmas and this pie is a wonderful way to capitalize on fresh, local fruit,” Elsen said. “Everyone loves apples and salted caramel, so this pie is a win-win.”
